Pizza Mini-Muffins

Ingredients

3/4 cup flour
3/4 teaspoon baking powder
1 tbsp italian seasoning (or make your own mix with garlic powder, oregano, thyme, and basil)
pinch of salt
3/4 cup milk
1 egg, beaten
1 cup shredded mozzarella cheese
1/2 cup chopped pepperoni (optional)
Extra shredded mozzarella cheese for topping
Store-bought pizza or spaghetti sauce

Instructions

1. In a bowl, mix the flour, baking powder, italian seasoning, and salt together.
2. Mix in the milk and beaten egg.
3. Stir in the mozzarella and pepperoni.
4. Let stand for 5 minutes and preheat the oven for 190 degrees C (375 degrees F).
5. Grease a 24-cup mini-muffin pan with oil or butter.
6. Pour a small amount of batter into each mini-muffin cup (about a third or half way).
7. For the filling, put a small amount of pizza or spaghetti sauce into each mini-muffin cup, then divide the remaining batter among the mini-muffin cups to cover up the sauce filling.
8. Top the cups with some shredded cheese.
9. Bake for 20-25 minutes, until the muffins are golden.
